Hand-picking

Harvest starts when Autumn comes. Hand-picking, or stripping, from tree is the most ancient and still the most common method in the environments where traditional implants conditions prevail and when the final product must have characteristics of value and goodness.
By hand-picking, the picker works on the plant with hands and simple tools (combs, small rakes), using wooden stairs to reach the higher fruits and laying cloths all around the tree crown to gather the olives and subsequently put them in cases, after separating them from leaves and sticks.
